Zucchini Noodle Stir Fry
A low-carb stir-fry with fresh zucchini noodles, crisp veggies, and a ginger-garlic soy sauce.
Ingredients
- 2 medium zucchinis, spiralized
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/2 onion, sliced
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1 garlic clove, minced
- 1/2 tsp fresh grated ginger
Instructions
- Heat sesame oil in a pan and sauté garlic and ginger for 1 min.
- Add onion, bell pepper, and carrot; stir-fry until just tender.
- Add zucchini noodles and soy sauce.
- Cook 2–3 mins, tossing gently until warmed through.
