Zucchini Noodle Stir Fry

A low-carb stir-fry with fresh zucchini noodles, crisp veggies, and a ginger-garlic soy sauce.

Ingredients

  • 2 medium zucchinis, spiralized
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 onion, sliced
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • 1/2 tsp fresh grated ginger

Instructions

  1. Heat sesame oil in a pan and sauté garlic and ginger for 1 min.
  2. Add onion, bell pepper, and carrot; stir-fry until just tender.
  3. Add zucchini noodles and soy sauce.
  4. Cook 2–3 mins, tossing gently until warmed through.
