Mediterranean Chicken Skillet

Bright, herby, and light — this one-pan dish brings classic Mediterranean flavors to your table in under 30 minutes.

  • 1 ½ lbs chicken breast or thighs, cut into chunks
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 2 cups fresh spinach
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Juice of 1 lemon
  • ½ cup kalamata olives (pitted, halved)
  • ½ cup crumbled feta cheese
  • Salt & pepper to taste
  1. Heat olive oil in a large skillet. Sauté onion, garlic, and bell peppers until softened.
  2. Add chicken pieces, season with oregano, basil, salt, and pepper. Cook until golden brown.
  3. Stir in diced tomatoes and simmer for 10 minutes.
  4. Add spinach and lemon juice; stir until wilted.
  5. Top with olives and feta. Serve hot with rice, couscous, or quinoa.
