Mediterranean Chicken Skillet
Bright, herby, and light — this one-pan dish brings classic Mediterranean flavors to your table in under 30 minutes.
Ingredients (serves 4):
- 1 ½ lbs chicken breast or thighs, cut into chunks
- 2 bell peppers, sliced
- 1 large onion, sliced
- 3 garlic cloves, minced
- 2 cups fresh spinach
- 1 can (14 oz) diced tomatoes
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Juice of 1 lemon
- ½ cup kalamata olives (pitted, halved)
- ½ cup crumbled feta cheese
- Salt & pepper to taste
Instructions:
- Heat olive oil in a large skillet. Sauté onion, garlic, and bell peppers until softened.
- Add chicken pieces, season with oregano, basil, salt, and pepper. Cook until golden brown.
- Stir in diced tomatoes and simmer for 10 minutes.
- Add spinach and lemon juice; stir until wilted.
- Top with olives and feta. Serve hot with rice, couscous, or quinoa.
