Healthy Bang Bang Chicken Lettuce Cups
A bold, spicy, and creamy dish — lightened up and packed with flavor!
Skip the deep fryer, keep the crunch, and serve it up fresh in crisp lettuce cups. This recipe brings the heat and the health!
Ingredients (Serves 4)
• 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
• 1 tbsp olive oil
• 1/2 tsp garlic powder
• Salt & pepper to taste
• 1 head of butter or romaine lettuce, leaves separated
• 1/2 cup shredded carrots
• 1/2 cup thinly sliced cucumbers
• 2 green onions, chopped
• 1 tbsp sesame seeds (optional)
For the Healthy Bang Bang Sauce:
• 1/4 cup Greek yogurt
• 2 tbsp light mayonnaise
• 1 tbsp honey
• 1–2 tbsp sriracha (to taste)
• 1 tsp rice vinegar
• 1 tsp lime juice
Instructions
1. Make the sauce: In a bowl, mix Greek yogurt, light mayo, honey, sriracha, vinegar, and lime juice. Adjust heat to taste. Chill until ready.
2. Cook the chicken: Heat olive oil in a skillet over medium heat. Season chicken with garlic powder, salt, and pepper. Cook until golden brown and cooked through (6–8 min).
3. Toss in sauce: Remove from heat, then toss cooked chicken in 2–3 tablespoons of bang bang sauce until lightly coated.
4. Assemble cups: Place a few spoonfuls of chicken in each lettuce leaf. Top with carrots, cucumber, green onion, and a sprinkle of sesame seeds.
5. Serve: Drizzle with more sauce or serve it on the side for dipping. Enjoy immediate
