Chicken Fajita Bowls
Smoky, zesty, and full of flavor — a Tex-Mex favorite made lighter and fresher.
Ingredients (serves 4):
- 1 ½ lbs chicken breast or thighs, cut into strips
- 2 bell peppers, sliced
- 1 large onion, sliced
- 3 garlic cloves, minced
- 2 cups fresh spinach
- 1 cup cherry or diced tomatoes
- 1 can black beans (drained, rinsed)
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- Juice of 1 lime
- ½ cup chopped fresh cilantro
- Cooked rice or quinoa (for serving)
- Salt & pepper to taste
Instructions:
- In a bowl, toss chicken with chili powder, paprika, cumin, lime juice, salt, and pepper.
- Heat oil in a skillet; cook chicken until browned. Remove and set aside.
- In the same pan, sauté onion, garlic, and bell peppers until lightly charred.
- Add spinach and cook until just wilted.
- Assemble bowls: rice/quinoa, black beans, chicken, peppers/onions, tomatoes, and fresh cilantro on top.
