Chicken Fajita Bowls

Smoky, zesty, and full of flavor — a Tex-Mex favorite made lighter and fresher.

  • 1 ½ lbs chicken breast or thighs, cut into strips
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 2 cups fresh spinach
  • 1 cup cherry or diced tomatoes
  • 1 can black beans (drained, rinsed)
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Juice of 1 lime
  • ½ cup chopped fresh cilantro
  • Cooked rice or quinoa (for serving)
  • Salt & pepper to taste
  1. In a bowl, toss chicken with chili powder, paprika, cumin, lime juice, salt, and pepper.
  2. Heat oil in a skillet; cook chicken until browned. Remove and set aside.
  3. In the same pan, sauté onion, garlic, and bell peppers until lightly charred.
  4. Add spinach and cook until just wilted.
  5. Assemble bowls: rice/quinoa, black beans, chicken, peppers/onions, tomatoes, and fresh cilantro on top.
