Za’atar Roasted Veggie Bowl
A colorful, plant-powered bowl packed with roasted vegetables, chickpeas, and the bold, earthy flavors of za’atar. Perfect for meal prep, light lunches, or a healthy dinner!
Ingredients:
Serves 2–3
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow squash, sliced
- 1 small red onion, sliced
- 1 cup cherry tomatoes
- 1 (15 oz) can chickpeas, drained and rinsed
- 2 tbsp olive oil
- 2 tbsp za’atar seasoning
- Salt & pepper, to taste
- 1 cup cooked quinoa or couscous
- 1/4 cup tahini
- Juice of 1 lemon
- 1 garlic clove, minced
- 2–3 tbsp water (to thin tahini sauce)
- Fresh parsley, for garnish
Instructions:
- Preheat oven to 425°F (220°C).
- Toss zucchini, bell pepper, squash, red onion, cherry tomatoes, and chickpeas with olive oil, za’atar, salt, and pepper on a large baking sheet.
- Roast for 25–30 minutes, stirring halfway, until vegetables are tender and lightly browned.
- Whisk together tahini, lemon juice, garlic, and water until smooth. Adjust thickness as needed.
- Assemble bowls with a base of quinoa or couscous, roasted veggies and chickpeas on top.
- Drizzle with tahini sauce and garnish with chopped parsley.
