Here’s a refreshing and nutrient-packed Vegetarian Watermelon & Greens Salad recipe using most of this weeks ingredients.
Watermelon & Greens Salad with Herby Lemon Dressing
Ingredients:
• 2 cups watermelon, cubed
• 1 cup organic spring mix
• 1 cup spinach, chopped
• 1 cup cabbage, thinly sliced (purple or green)
• 1 zucchini, spiralized or thinly sliced into ribbons
• 1 celery stalk, thinly sliced
• 1 carrot, grated or julienned
• 2 tbsp cilantro, chopped
• 2 tbsp parsley, chopped
For the Dressing:
• 2 tbsp olive oil
• 1 tbsp lemon juice
• 1 tsp lemon zest
• 1 tsp honey or maple syrup (optional for sweetness)
• Salt and pepper, to taste
Instructions:
1. Prepare the Salad:
• In a large bowl, combine the spring mix, spinach, cabbage, zucchini, celery, carrot, and herbs (cilantro and parsley). Toss lightly.
• Add the watermelon cubes on top for a pop of sweetness.
2. Make the Dressing:
• In a small bowl, whisk together the olive oil, lemon juice, lemon zest, honey (if using), salt, and pepper.
3. Combine and Serve:
• Drizzle the dressing over the salad.
• Gently toss to combine, ensuring the dressing coats all the ingredients.
• Serve immediately as a light lunch or side dish.
Optional Additions:
• Crumbled feta or goat cheese for extra flavor.
• A sprinkle of sunflower seeds or pumpkin seeds for added crunch.
