Vegetarian Cauliflower & Potato Salad Wrap
Ingredients:
• 4 eggs, boiled and chopped
• 1 cup cauliflower, finely chopped
• 2 medium potatoes, peeled, boiled, and diced
• 1 carrot, peeled and grated
• 1 stalk celery, finely chopped
• ½ English cucumber, diced
• 4 large lettuce leaves (for wrapping)
Dressing:
• 3 tbsp Greek yogurt or mayonnaise
• 1 tsp Dijon mustard
• 1 tbsp lemon juice
• Salt & pepper to taste
• ½ tsp garlic powder (optional)
Instructions:
1. In a bowl, mix the boiled eggs, cauliflower, potatoes, carrot, celery, and cucumber.
2. In a separate bowl, whisk together the yogurt/mayo, mustard, lemon juice, salt, pepper, and garlic powder.
3. Pour the dressing over the veggie mixture and toss gently to coat everything evenly.
4. Lay out the lettuce leaves and spoon the mixture onto each leaf.
5. Wrap the lettuce around the filling like a taco or roll it up like a wrap.
6. Serve immediately or chill for a refreshing, crisp texture.
