Turkey Spinach Stuffed Mushrooms

Savory, satisfying, and packed with protein—these Turkey Spinach Stuffed Mushrooms are the perfect healthy bite. Great as an appetizer or light meal, they’re low-carb, full of flavor, and super easy to whip up!

  • 16 large white or cremini mushrooms, stems removed
  • 1 tbsp olive oil
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 lb lean ground turkey
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup plain Greek yogurt
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • Chopped parsley for garnish
  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment or foil.
  2. Clean mushrooms gently with a damp towel. Remove stems and set mushroom caps aside. Finely chop the stems.
  3. Sauté aromatics: In a large skillet over medium heat, heat olive oil. Add onion and chopped mushroom stems. Cook 3–4 minutes until softened. Add garlic and sauté 1 minute more.
  4. Add turkey: Stir in ground turkey and cook until browned and cooked through, breaking up as it cooks.
  5. Add spinach: Toss in chopped spinach and cook until wilted, about 1–2 minutes.
  6. Finish filling: Remove skillet from heat. Stir in Greek yogurt, Parmesan, salt, pepper, and red pepper flakes. Mix well.
  7. Stuff mushrooms: Spoon filling into each mushroom cap, slightly mounding the tops. Place them on the prepared baking sheet.
  8. Bake: Cook for 18–20 minutes, until mushrooms are tender and tops are golden.
  9. Serve: Garnish with fresh parsley and enjoy warm!
