Tomato Basil Orzo
Light, fresh, and bursting with flavor! This healthy Tomato Basil Orzo is a simple one-pot dish that’s perfect as a side or main. Ready in under 30 minutes, it’s a warm-weather favorite with juicy tomatoes, fresh basil, and creamy orzo.
Ingredients
- 1 cup orzo pasta
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 pint cherry tomatoes, halved
- 2 cups low-sodium vegetable broth
- Salt & pepper, to taste
- 1/4 cup grated Parmesan (optional for added creaminess)
- 1/4 cup chopped fresh basil
- Juice of 1/2 lemon
Instructions
- In a large skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant.
- Toss in halved cherry tomatoes and sauté for 2-3 minutes, just until they start to soften.
- Add dry orzo and toast lightly for 1 minute, stirring constantly.
- Pour in vegetable broth and bring to a boil. Reduce heat to low and simmer uncovered for 10-12 minutes, stirring occasionally, until orzo is al dente and liquid is mostly absorbed.
- Season with salt, pepper, and lemon juice. Stir in Parmesan if using.
- Remove from heat and fold in fresh basil.
- Serve warm or at room temperature with an extra basil garnish!
