Tomato Basil Orzo

Light, fresh, and bursting with flavor! This healthy Tomato Basil Orzo is a simple one-pot dish that’s perfect as a side or main. Ready in under 30 minutes, it’s a warm-weather favorite with juicy tomatoes, fresh basil, and creamy orzo.

  • 1 cup orzo pasta
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 pint cherry tomatoes, halved
  • 2 cups low-sodium vegetable broth
  • Salt & pepper, to taste
  • 1/4 cup grated Parmesan (optional for added creaminess)
  • 1/4 cup chopped fresh basil
  • Juice of 1/2 lemon
  1. In a large skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant.
  2. Toss in halved cherry tomatoes and sauté for 2-3 minutes, just until they start to soften.
  3. Add dry orzo and toast lightly for 1 minute, stirring constantly.
  4. Pour in vegetable broth and bring to a boil. Reduce heat to low and simmer uncovered for 10-12 minutes, stirring occasionally, until orzo is al dente and liquid is mostly absorbed.
  5. Season with salt, pepper, and lemon juice. Stir in Parmesan if using.
  6. Remove from heat and fold in fresh basil.
  7. Serve warm or at room temperature with an extra basil garnish!
