Stuffed Bell Peppers with Turkey & Quinoa

Lean ground turkey and protein-rich quinoa make these colorful peppers a powerhouse meal.

Ingredients

  • 4 bell peppers, tops cut off and seeds removed
  • 1 lb ground turkey
  • 1 cup cooked quinoa
  • 1/2 onion, diced
  • 1 cup diced tomatoes
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Sauté onion in a skillet until soft, add turkey and cook through.
  3. Stir in quinoa, tomatoes, and seasonings.
  4. Fill each bell pepper with the turkey mixture.
  5. Top with cheese (if using) and bake 25 minutes.
