Stuffed Bell Peppers with Turkey & Quinoa
Lean ground turkey and protein-rich quinoa make these colorful peppers a powerhouse meal.
Ingredients
- 4 bell peppers, tops cut off and seeds removed
- 1 lb ground turkey
- 1 cup cooked quinoa
- 1/2 onion, diced
- 1 cup diced tomatoes
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/4 cup shredded cheese (optional)
Instructions
- Preheat oven to 375°F.
- Sauté onion in a skillet until soft, add turkey and cook through.
- Stir in quinoa, tomatoes, and seasonings.
- Fill each bell pepper with the turkey mixture.
- Top with cheese (if using) and bake 25 minutes.
