Spinach Feta Chicken Rolls Recipe

– 4 large chicken breasts, pounded thin

– 1 cup fresh spinach, chopped

– 1/2 cup feta cheese, crumbled

– 1 clove garlic, minced

– 1/4 cup sun-dried tomatoes, chopped (optional)

– Salt and pepper, to taste

– Olive oil

– Toothpicks

Preheat your oven to 375°F.

In a mixing bowl, combine spinach, feta cheese, garlic, and sun-dried tomatoes. Season with salt and pepper.

Lay the chicken breasts flat and place a spoonful of the spinach mixture in the center. Roll the chicken breasts up tightly and secure with toothpicks.
