Shrimp Saganaki (Greek Shrimp with Feta & Tomatoes)
This fiery, tangy, and cheesy Greek dish brings bold flavor to your table in under 30 minutes. Perfect for dipping crusty bread!
Ingredients:
- 1 lb large shrimp, peeled & deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small red onion, finely chopped
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp tomato paste
- 1/4 tsp red pepper flakes (optional)
- 1/2 tsp dried oregano
- Salt & pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/2 cup crumbled feta cheese
- Juice of 1/2 lemon
- Crusty bread or rice for serving
Instructions:
- Sauté aromatics: In a skillet over medium heat, warm olive oil. Add garlic and onion; cook until fragrant and translucent, about 3–4 minutes.
- Make the sauce: Stir in diced tomatoes, tomato paste, oregano, red pepper flakes, salt, and pepper. Simmer uncovered for 10 minutes until slightly thickened.
- Add shrimp: Nestle the shrimp into the sauce. Cook for 3–4 minutes per side until pink and just cooked through.
- Finish it off: Squeeze lemon juice over the top, sprinkle with crumbled feta and fresh parsley. Let simmer 1 more minute to melt the feta slightly.
- Serve: Best enjoyed hot with crusty bread or over rice to soak up all that saucy goodness!
