Shredded Beef Tacos

This recipe has been a beloved family favorite since I first shared it in 2019 on Neighbors Cooking.

It’s one of my original go-to dishes, and I still make it regularly for parties, family gatherings, weeknight dinners, and as part of my meal prep routine.

This shredded beef taco recipe is incredibly easy to prepare, featuring tender beef bursting with flavor that everyone enjoys. Plus, it’s versatile—use leftover beef in enchiladas, taquitos, nachos, quesadillas, tamales, or burritos. When short on time, enjoy these as street-style tacos with just beef, cilantro, onion, and lime.

– 2 lbs beef chuck roast

– 1 tablespoon olive oil

– 1 tablespoon chili powder

– 1 teaspoon cumin

– 1 teaspoon onion powder

– 1 teaspoon garlic powder

– Salt and pepper, to taste

– 1 cup beef broth

– Taco Assembly:

– Corn or flour tortillas

– Shredded lettuce

– Diced tomatoes

– Shredded cheese (cheddar or your preferred type)

– Additional toppings (optional): sour cream, guacamole, salsa, sliced jalapeños, avacados

1. Prepare the Beef:

– Rub the beef chuck roast with salt, pepper, chili powder, cumin, onion powder, and garlic powder.

– Heat olive oil in a large skillet over medium-high heat. Sear the beef on all sides until browned.

2. Cook the Beef:

– Place the seared beef in a slow cooker. Pour the beef broth around the meat.

– Cover and cook on low for 8-9 hours or on high for 4-5 hours, until the beef is tender and can be shredded easily with a fork.

3. Shred the Beef:

– Once cooked, remove the beef from the slow cooker and shred it using two forks.

– Return the shredded beef to the slow cooker and mix with the juices for extra flavor.

4. Assemble the Tacos:

– Warm your tortillas in a skillet or microwave.

– Fill each tortilla with a generous portion of shredded beef.

– Top with shredded lettuce, diced tomatoes, and shredded cheese.

– Add any additional toppings like sour cream, guacamole, or salsa based on your preference.

5. Serve:

– Serve immediately while warm, allowing everyone to customize their tacos with desired toppings.

– For a spicier kick, add some cayenne pepper or chopped jalapeños to the beef cooking process.

– If you prefer crispy tacos, lightly fry the tortillas in a bit of oil before assembling.
