Shepherd’s Pie Muffins
Shepherd’s Pie Muffins are a fun, bite-sized twist on the classic comfort dish! These individual shepherd’s pie muffins are baked in a flaky pie crust, layered with a hearty meat and veggie filling, topped with melted cheese, and finished with a scoop of creamy mashed potatoes.
Ingredients
For the crust:
• 1 package (2 sheets) refrigerated pie crusts
• Flour (for dusting)
For the filling:
• 1 lb ground beef or lamb
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 1 cup fresh or frozen mixed vegetables (peas, carrots, corn)
• 1 tablespoon tomato paste
• 1 tablespoon Worcestershire sauce
• 1 teaspoon fresh thyme (or ½ teaspoon dried)
• ½ teaspoon salt
• ½ teaspoon black pepper
• ½ cup beef broth
• 1 tablespoon flour (to thicken)
For the topping:
• 1 cup shredded cheddar cheese (yellow cheddar for color)
• 2 cups mashed potatoes (prepared and creamy)
• 2 tablespoons butter (for extra richness)
Instructions
Step 1: Prepare the Crust
1. Preheat oven to 375°F (190°C).
2. Lightly grease a 12 or 6 cup muffin tin.
3. Roll out the pie crusts on a floured surface.
4. Place the sheet over the muffin cups, and place another identical tin on top to push the crust in. Refrigerate while preparing the filling.
Step 2: Make the Filling
1. In a large skillet over medium heat, cook the ground beef or lamb until browned. Drain excess fat.
2. Add the onion and garlic, sautéing until soft (about 3 minutes).
3. Stir in the fresh or frozen vegetables, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
4. Pour in the beef broth and bring to a simmer. Sprinkle in the flour and stir to thicken. Let it cook for 3–4 minutes.
5. Remove from heat and let cool slightly.
Step 3: Assemble the Muffins
1. Spoon about 2 – 4 tablespoons of the filling into each pie crust cup.
2. Sprinkle shredded cheddar cheese over the filling.
3. Top each with a scoop of mashed potatoes.
4. (Optional) Brush the mashed potatoes with melted butter for a golden finish.
Step 4: Bake and Serve
1. Bake in the preheated oven for 18–22 minutes, or until the crust is golden brown and the cheese is melted.
2. Let the muffins cool for 5 minutes before removing them from the pan.
3. Serve warm and enjoy!
