Savory Zucchini & Carrot Fritters with Honeydew Salsa

These crispy vegetable fritters are paired with a refreshing honeydew and tomato salsa for a perfect balance of flavors.

Servings: 6

• 2 zucchini, grated

• 2 carrots, grated

• 2 eggs

• ½ cup flour (or breadcrumbs)

• ½ tsp salt

• ½ tsp black pepper

• ½ tsp garlic powder

• ½ tsp cumin (optional)

• 2 tbsp olive oil (for frying)

• 1 cup honeydew melon, diced

• 2 Roma tomatoes, diced

• ½ European cucumber, diced

• ½ grapefruit, juiced

• 1 tbsp fresh cilantro or parsley, chopped

• Salt and pepper to taste

• Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes to release excess moisture.

• Squeeze out the liquid using a clean towel.

• In a bowl, mix zucchini, grated carrots, eggs, flour, black pepper, garlic powder, and cumin until well combined.

• Heat oil in a skillet over medium heat.

• Remove and drain on paper towels.

• In a bowl, mix honeydew, tomatoes, cucumber, grapefruit juice, and chopped herbs.
