Roasted Veggie & Sausage Hash with Citrus Drizzle

• 2 carrots, diced

• 2 celery stalks, sliced

• 1 onion, diced

• 2 potatoes, diced

• 1 beet, peeled and diced

• 1 cup broccoli florets

• 1 cup cauliflower florets

• 2 link sausages (pork, chicken, or veggie), sliced into rounds

• 2 eggs

• 1 lemon (juice + zest)

• 1 grapefruit (juice)

• Olive oil

• Salt & pepper

• Fresh herbs (optional: thyme, parsley)

1. Preheat the oven to 400°F (200°C).

2. On a large baking sheet, toss carrots, celery, onion, potatoes, beets, broccoli, and cauliflower with olive oil, salt, and pepper. Spread out evenly.

3. Add sliced sausage to the sheet.

4. Roast for 30–35 minutes, stirring halfway through, until veggies are tender and slightly crispy.

5. While roasting, make a citrus drizzle: Mix the juice of 1 lemon, juice of half a grapefruit, a tablespoon of olive oil, and a pinch of salt.

6. Fry or poach the eggs to your liking.

7. Plate the roasted veggie and sausage hash, top with an egg, drizzle with citrus sauce, and sprinkle with lemon zest and herbs.

2. Tomato & Citrus Poached Egg Salad with Roasted Beets

• 2 beets, peeled and cut into wedges

• 2 tomatoes, sliced or chopped

• 1 celery stalk, thinly sliced

• 1 carrot, grated

• 1/2 onion, thinly sliced

• 1 lemon (juice)

• 1 grapefruit (segments + juice)

• 2 eggs

• Olive oil

• Salt & pepper

• Optional: crumbled feta or goat cheese

1. Preheat oven to 400°F (200°C).

2. Toss beet wedges with olive oil, salt, and pepper. Roast on a sheet pan for 30 minutes, flipping halfway.

3. In a large bowl, combine tomatoes, celery, grated carrot, and onion.

4. For the dressing, whisk together the juice of 1 lemon, a splash of grapefruit juice, olive oil, salt, and pepper.

5. Add the roasted beets to the bowl, toss everything gently with the dressing.

6. In simmering water with a splash of vinegar, poach the eggs until whites are set but yolks are runny (about 3-4 minutes).

7. Plate the salad, add grapefruit segments on top, and place a poached egg in the center. Sprinkle with extra salt and pepper.

8. Optional: crumble some feta or goat cheese over the top.
