Roasted Coachella Valley Harvest Bowl
Ingredients:
– 1 cup quinoa, rinsed
– 2 cups water
– 1 butternut squash, peeled and cubed
– 1 cup Brussels sprouts, halved
– 1 tablespoon olive oil
– Salt and pepper, to taste
– 2 tablespoons fresh pomegranate seeds
– 1/4 cup chopped walnuts, lightly toasted
– 2 dates, pitted and chopped
– 1/4 cup goat cheese, crumbled
– Fresh rosemary and thyme, chopped
Dressing:
– 2 tablespoons olive oil
– 1 tablespoon apple cider vinegar
– 1 teaspoon honey
– 1 teaspoon Dijon mustard
– Salt and pepper, to taste
Instructions:
1. Preheat oven to 400°F (200°C).
2. In a medium pot, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until water is absorbed. Fluff with a fork and set aside.
3. On a large baking sheet, toss the butternut squash and Brussels sprouts with olive oil, salt, and pepper. Spread in a single layer and roast for 20-25 minutes, turning halfway, until vegetables are tender and slightly caramelized.
4. In a small bowl, whisk together dressing ingredients: olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
5. In a large mixing bowl, combine cooked quinoa, roasted vegetables, pomegranate seeds, walnuts, and chopped dates.
6. Drizzle the dressing over the quinoa and vegetable mixture, gently toss to combine.
7. Top with goat cheese and sprinkle fresh rosemary and thyme.
