Rainbow Veggie Stir-Fry
Ingredients (Serves 4)
Vegetables:
• 1 tbsp sesame oil or olive oil
• 2 cloves garlic, minced
• 1 tbsp fresh ginger, minced
• 1 red bell pepper, sliced
• 1 orange bell pepper, sliced
• 1 yellow squash or yellow bell pepper, sliced
• 1 zucchini (green), sliced
• 1 cup purple cabbage, shredded
• 1/2 cup snap peas or broccoli florets
• 1/2 red onion, sliced
• 2 green onions, chopped (for garnish)
• Sesame seeds (for garnish)
Optional Protein:
• 1/2 block extra-firm tofu or 1 cup cooked chicken, cubed
Serve With:
• Steamed jasmine rice, brown rice, or rice noodles

Garlic Ginger Stir-Fry Sauce:
• 1/4 cup low-sodium soy sauce or tamari
• 1 tbsp rice vinegar
• 1 tbsp maple syrup or honey
• 1 tsp sriracha or chili paste (optional, for heat)
• 1 tsp cornstarch + 2 tbsp water (for thickening)
