Quinoa Berry Breakfast Bowl

Ingredients
(Serves 2)
- 1 cup cooked quinoa (cooled)
- 1/2 cup unsweetened almond milk (or milk of choice)
- 1 tbsp chia seeds
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup or honey (optional)
- 1/2 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1/4 banana, sliced
- 2 tbsp chopped almonds or walnuts
- 2 tbsp unsweetened shredded coconut (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- Prep the Base
In a bowl, mix cooled quinoa with almond milk, chia seeds, vanilla, and sweetener. Let sit for 5 minutes to allow the chia seeds to soften slightly.
- Assemble the Bowl
Divide the quinoa mixture into two bowls. Top each with strawberries, blueberries, raspberries, banana slices, and nuts.
- Finishing Touches
Sprinkle with shredded coconut and garnish with fresh mint if desired.
