One-Pot Spaghetti Bolognese

Comfort food made simple—this rich and hearty Bolognese comes together in just one pot, making cleanup a breeze. Perfect for weeknight dinners!

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb lean ground beef
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste
  • 2 tbsp tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 3 cups beef broth
  • 8 oz dry spaghetti (break in half)
  • ½ cup grated Parmesan
  • Fresh parsley or basil for garnish
  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 3–4 minutes. Stir in garlic and cook 1 minute more.
  2. Brown the beef: Add ground beef to the pot and cook until browned. Drain excess fat if needed. Season with oregano, basil, red pepper flakes, salt, and pepper.
  3. Build the sauce: Stir in tomato paste and cook for 1 minute. Add crushed tomatoes and beef broth, bringing everything to a simmer.
  4. Add pasta: Stir in dry spaghetti. Push noodles down to submerge them. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is cooked and sauce has thickened.
  5. Finish & serve: Stir in grated Parmesan. Taste and adjust seasoning. Serve hot with extra cheese and fresh herbs on top.
