Mushroom Lobster Quesadilla

  • 1 cup mushrooms, sliced
  • 1 cup cooked lobster meat, chopped
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)
  • Sour cream, for serving (optional)
  • Salsa, for serving (optional)
  • Slice mushrooms, chop lobster, and dice the onion.
  • Heat olive oil in a skillet over medium heat.
  • Add diced onions and cook until translucent (about 3-4 minutes).
  • Add sliced mushrooms, cook until browned and tender (about 5-6 minutes).
  • Add minced garlic and cook for another minute. Season with salt and pepper.
  • Add cooked lobster to the mushroom mixture.
  • Stir until everything is well combined and heated through (about 2-3 minutes). Remove from heat.
  • Heat another skillet over medium heat and add butter.
  • Place a tortilla in the skillet and sprinkle one-half with shredded cheese.
  • Add a generous portion of the mushroom-lobster mixture over the cheese.
  • Sprinkle more cheese on top of the mixture and fold the tortilla in half.
  • Cook until the bottom is golden brown and crispy (about 2-3 minutes).
  • Flip the quesadilla and cook the other side until golden brown and the cheese is melted.
  • Remove from skillet and repeat with remaining tortillas and filling.
  • Cut quesadillas into wedges.
  • Garnish with fresh cilantro (optional) and serve with sour cream and salsa.
