Mushroom Lobster Quesadilla
Ingredients
- 1 cup mushrooms, sliced
- 1 cup cooked lobster meat, chopped
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh cilantro, chopped (optional)
- Sour cream, for serving (optional)
- Salsa, for serving (optional)
Instructions:
1. Prep Ingredients:
- Slice mushrooms, chop lobster, and dice the onion.
2. Cook Mushrooms and Onions:
- Heat olive oil in a skillet over medium heat.
- Add diced onions and cook until translucent (about 3-4 minutes).
- Add sliced mushrooms, cook until browned and tender (about 5-6 minutes).
- Add minced garlic and cook for another minute. Season with salt and pepper.
3. Add Lobster:
- Add cooked lobster to the mushroom mixture.
- Stir until everything is well combined and heated through (about 2-3 minutes). Remove from heat.
4. Assemble Quesadillas:
- Heat another skillet over medium heat and add butter.
- Place a tortilla in the skillet and sprinkle one-half with shredded cheese.
- Add a generous portion of the mushroom-lobster mixture over the cheese.
- Sprinkle more cheese on top of the mixture and fold the tortilla in half.
5. Cook Quesadillas:
- Cook until the bottom is golden brown and crispy (about 2-3 minutes).
- Flip the quesadilla and cook the other side until golden brown and the cheese is melted.
6. Serve:
- Remove from skillet and repeat with remaining tortillas and filling.
- Cut quesadillas into wedges.
- Garnish with fresh cilantro (optional) and serve with sour cream and salsa.
