Mediterranean Chickpea Salad

A refreshing bowl of fiber-packed chickpeas, crisp veggies, and a zesty vinaigrette that hits all the right notes.

  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, halved
  • 2 tbsp feta cheese (optional)
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste
  1. In a large bowl, combine chickpeas, cucumber, tomatoes, onion, olives, and parsley.
  2. Drizzle with olive oil and lemon juice.
  3. Toss gently and season with salt and pepper.
  4. Top with feta cheese (optional) and serve chilled.
