Mediterranean Chickpea Salad
A refreshing bowl of fiber-packed chickpeas, crisp veggies, and a zesty vinaigrette that hits all the right notes.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, halved
- 2 tbsp feta cheese (optional)
- 2 tbsp fresh parsley, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, cucumber, tomatoes, onion, olives, and parsley.
- Drizzle with olive oil and lemon juice.
- Toss gently and season with salt and pepper.
- Top with feta cheese (optional) and serve chilled.
