Lemon Herb Garlic Chicken
Bright, zesty, and packed with flavor, this Lemon Herb Garlic Chicken is a weeknight dinner hero. Juicy, golden chicken thighs are marinated in a fresh lemon-herb blend and pan-seared to perfection. Simple, healthy, and delicious!
Ingredients:
- 4 boneless, skinless chicken thighs
- 3 tbsp olive oil
- Juice & zest of 1 lemon
- 4 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)
- Fresh parsley for garnish
Instructions:
- Make the Marinade:
In a bowl, whisk together olive oil, lemon juice & zest, minced garlic, oregano, thyme, salt, pepper, and red pepper flakes.
- Marinate the Chicken:
Add chicken thighs to a resealable bag or bowl and pour the marinade over. Toss to coat. Let marinate in the fridge for at least 30 minutes, up to 4 hours.
- Cook the Chicken:
Heat a large skillet over medium-high heat. Add a splash of olive oil, then place chicken thighs in the pan. Cook for 6–7 minutes per side, until golden and cooked through (internal temp of 165°F).
- Serve & Enjoy:
Let rest for a few minutes, then slice and top with fresh parsley. Serve with roasted veggies, a salad, or over rice!
