Honey Sesame Chicken Bowl

– **For the Chicken:**

– 1 lb chicken breast, cubed

– 2 tbsp soy sauce

– 1 tbsp sesame oil

– 1/4 cup honey

– 1 tbsp rice vinegar

– 1 clove garlic, minced

– 1 tsp grated ginger

– 1/4 cup water

– 1 tbsp cornstarch

– 1 tbsp sesame seeds

– For the Rice:

– 1 cup jasmine rice

– 2 cups water

– Toppings:

– 2 green onions, sliced

– Rinse the jasmine rice under cold water until the water runs clear.

– In a medium saucepan, add the rice and water. Bring to a boil over high heat.

– Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the water is absorbed and the rice is tender.

– Remove from heat and let it sit covered.

– In a bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, minced garlic, and grated ginger.

– Add the cubed chicken to the bowl and mix to coat. Let it marinate for at least 15 minutes.

– Heat a large skillet over medium-high heat. Add the marinated chicken and cook until browned on all sides and fully cooked, about 5-7 minutes.

– In a small bowl, mix the water and cornstarch to form a slurry. Pour this mixture into the skillet with the chicken and stir until the sauce thickens, about 2 minutes.

– Sprinkle the sesame seeds over the chicken and stir to combine.

– Divide the cooked jasmine rice into bowls.

– Top each bowl with the honey sesame chicken.

– Garnish with sliced green onions and extra sesame seeds if desired.
