This fresh, zesty, and satisfying dish features smoky grilled shrimp, a vibrant salsa, and a creamy, tangy sauce—perfect for a midweek treat!

A bold and fresh summer bowl bursting wNeighbors Cooking shrimp, sweet corn salsa, creamy avocado, and a zesty chipotle drizzle. Perfect for lunch or dinner and packed with flavor in every bite!

• 1½ lbs large shrimp, peeled and deveined

• 2 tbsp olive oil

• 1 tsp smoked paprika

• 1 tsp garlic powder

• ½ tsp cumin

• Salt & pepper to taste

• Juice of 1 lime

• 1½ cups grilled or canned corn (drained)

• 1 cup cherry tomatoes, halved

• ¼ cup red onion, finely chopped

• ¼ cup fresh cilantro, chopped

• Juice of 1 lime

• Salt & pepper to taste

For the Creamy Chipotle Sauce

• ½ cup Greek yogurt or sour cream

• 1–2 tbsp adobo sauce (from canned chipotles in adobo)

• Juice of ½ lime

• 1 tsp honey

• Pinch of salt

• 2 cups cooked brown rice or quinoa

• 1 avocado, sliced

• Fresh cilantro and lime wedges for garnish

In a bowl, toss shrimp with olive oil, paprika, garlic powder, cumin, lime juice, salt, and pepper. Let marinate 10–15 minutes.

Heat a grill or grill pan over medium-high. Grill shrimp 2–3 minutes per side until opaque and lightly charred. Set aside.

In a bowl, mix corn, tomatoes, red onion, cilantro, lime juice, salt, and pepper. Chill until ready to serve.

Whisk together Greek yogurt, adobo sauce, lime juice, honey, and salt until smooth.

Divide rice or quinoa into bowls. Top with grilled shrimp, corn salsa, avocado slices, and a drizzle of chipotle sauce. Garnish with fresh cilantro and lime wedges.
