Garlic Butter Steak Bites with Veggies

Tender, juicy steak bites seared in garlic butter and served with perfectly roasted veggies. This quick, protein-packed dinner is rich in flavor and light on effort—perfect for busy weeknights or meal prep!

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1 cup broccoli florets
  • 1 cup zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Preheat oven to 425°F. Toss broccoli, zucchini, and red bell pepper in 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until tender and lightly charred.

While veggies roast, heat 1 tbsp olive oil in a large skillet over medium-high heat. Add steak bites in a single layer (do in batches if needed). Sear 2–3 minutes per side until browned. Remove from skillet.

In the same skillet, reduce heat to medium and melt 2 tbsp butter. Add minced garlic and sauté for 30 seconds until fragrant.

Return steak bites to the skillet and toss with the garlic butter for 1–2 minutes. Remove from heat and sprinkle with smoked paprika and parsley.

Plate garlic butter steak bites alongside your roasted veggies. Enjoy hot!
