Firecracker Shrimp

Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 cup buttermilk
- 1 cup cornstarch
- 1/2 cup all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- Vegetable oil for frying
Firecracker Sauce:
- 1/2 cup mayo
- 1/4 cup sweet chili sauce
- 1–2 tbsp sriracha (adjust to your heat level)
- 1 tbsp honey
- 1 tsp rice vinegar
- Pinch of red pepper flakes
Instructions:
- Prep the Shrimp: In a bowl, soak shrimp in buttermilk for 15–20 minutes.
- Mix the Coating: In a shallow dish, combine cornstarch, flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Make the Sauce: In a separate bowl, whisk together mayo, sweet chili sauce, sriracha, honey, rice vinegar, and red pepper flakes. Set aside.
- Heat the Oil: In a deep skillet or pot, heat oil to 350°F (175°C).
- Coat & Fry: Remove shrimp from buttermilk, dredge in the flour mixture, and fry in batches until golden and crispy (about 2 minutes per side). Drain on a paper towel.
- Toss in Sauce: Once fried, toss shrimp in the firecracker sauce or drizzle over the top.
- Serve: Garnish with chopped green onions or sesame seeds and serve at once!
