Creamy Parmesan Italian Sausage Soup
Ingredients:
– 1 pound Italian sausage, casing removed
– 1 tablespoon olive oil
– 1 small onion, chopped
– 2 cloves garlic, minced
– 4 cups chicken broth
– 1 can (14.5 oz) diced tomatoes
– 1 cup heavy cream
– 1 cup grated Parmesan cheese
– 2 cups baby spinach
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
Instructions:
1. Heat olive oil in a large pot over medium heat. Brown the Italian sausage, breaking it into pieces with a spoon. Drain excess fat, if necessary.
2. Add chopped onion and minced garlic to the pot. Cook until the onion becomes translucent, about 3-4 minutes.
3. Pour in the chicken broth and diced tomatoes. Bring the mixture to a simmer.
4. Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Simmer for 10 minutes, stirring occasionally.
5. Add baby spinach and cook until wilted, approximately 2 minutes.
6. Adjust seasoning with salt and pepper to taste.
Notes:
– For a thicker soup, mix 1 tablespoon of cornstarch with 1 tablespoon of water, and add to the soup.
– Serve with crusty bread or garlic bread for a complete meal.
