Creamy Corn & Pancetta Pasta
Sweet summer corn, crispy pancetta, and a silky cream sauce come together in this easy, mouthwatering pasta dish. It’s comforting, quick, and perfect for any night of the week!
Ingredients:
- 12 oz pasta (rigatoni or penne work great)
- 6 oz pancetta, diced
- 2 cups corn kernels (fresh or frozen)
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/4 cup pasta water (reserved)
- Salt & freshly ground black pepper
- 1 tbsp olive oil
- Fresh basil or parsley, chopped (for garnish)
Instructions:
- Cook the pasta: Boil in salted water until al dente. Reserve 1/4 cup of pasta water before draining.
- Crisp the pancetta: In a large skillet over medium heat, cook pancetta until golden and crispy. Remove and set aside.
- Sauté the corn and garlic: In the same skillet, add olive oil (if needed), garlic, and corn. Cook for 3–4 minutes until fragrant and lightly golden.
- Make it creamy: Stir in the heavy cream and Parmesan. Let it simmer gently for 2–3 minutes.
- Toss it all together: Add the cooked pasta and reserved pancetta to the skillet. Loosen the sauce with reserved pasta water if needed. Season with salt and pepper to taste.
- Serve and garnish: Plate it up and sprinkle with fresh herbs and extra Parmesan.
