Classic Creamy Tomato Soup
A rich, velvety tomato soup that pairs perfectly with the Grilled Ground Chicken & Cheese Sandwich!
Ingredients (Serves 4-6)
- 2 tbsp olive oil or butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can whole San Marzano tomatoes (or fire-roasted tomatoes)
- 2 cups chicken or vegetable broth
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp dried basil (or 1 tbsp fresh, chopped)
- ½ tsp smoked paprika (for depth)
- 1 tbsp tomato paste (for extra richness)
- ½ cup heavy cream (or full-fat coconut milk for a dairy-free version)
- 1 tsp honey or sugar (to balance acidity)
- Fresh basil & grated Parmesan (for garnish, optional)
Instructions
- Sauté Aromatics
- Heat olive oil or butter in a large pot over medium heat.
- Add the diced onion and cook for 4-5 minutes, stirring occasionally, until soft and translucent.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Build the Flavor
- Stir in the tomato paste and let it cook for 1 minute to deepen the flavor.
- Pour in the canned tomatoes with their juices, crushing them slightly with a spoon.
- Simmer & Blend
- Add the broth, salt, black pepper, basil, and smoked paprika. Stir well.
- Bring to a gentle simmer and cook uncovered for 15-20 minutes, stirring occasionally.
- Blend for Smoothness
- Use an immersion blender to puree the soup directly in the pot until smooth.
- (Alternatively, carefully transfer in batches to a blender and blend until silky.)
- Finish with Cream & Honey
- Stir in the heavy cream and honey (or sugar) and let it heat through for another 2 minutes.
- Taste and adjust seasoning as needed.
- Serve & Enjoy
- Ladle into bowls and garnish with fresh basil, a drizzle of cream, and Parmesan if desired.
