Citrus-Glazed Turkey & Chicken Salad with Avocado and Dragon Fruit

• 1 cup cooked turkey, shredded

• 1 cup cooked chicken, shredded

• 1 avocado, diced

• 1 dragon fruit, diced

• 2 cups lettuce, chopped

• 1 carrot, julienned

• 1/2 cup cilantro, chopped

• 1 grapefruit, segmented, juice reserved

• 2 tbsp olive oil

• 1 tbsp honey

• 1 tsp Dijon mustard

• Salt and pepper to taste

1. In a large bowl, combine turkey, chicken, avocado, dragon fruit, lettuce, carrot, and cilantro.

2. In a separate small bowl, whisk together grapefruit juice, olive oil, honey, Dijon mustard, salt, and pepper.

3. Drizzle the dressing over the salad and toss gently to combine.

4. Garnish with grapefruit segments and serve chilled.

Recipe 2: Roasted Squash & Carrot Soup with Citrus-Avocado Salsa

• 1 small butternut squash, peeled and diced

• 2 carrots, chopped

• 1 tbsp olive oil

• 1/2 tsp salt

• 1/2 tsp black pepper

• 3 cups chicken or turkey broth

• 1/2 cup cooked turkey or chicken, shredded

• 1/2 tsp ground cumin

• 1/2 tsp smoked paprika

• 1/2 avocado, diced

• 1/2 dragon fruit, diced

• 1/2 grapefruit, segmented and chopped

• 1 tbsp cilantro, chopped

• 1 tbsp lime juice

• Salt to taste

1. Preheat oven to 400°F (200°C). Toss squash and carrots with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.

2. Transfer roasted vegetables to a blender, add broth, and blend until smooth.

3. Pour the mixture into a pot over medium heat, stir in shredded turkey or chicken, cumin, and smoked paprika. Simmer for 10 minutes.

4. In a small bowl, mix avocado, dragon fruit, grapefruit, cilantro, lime juice, and salt to create the salsa.

5. Serve the soup hot, topped with a spoonful of citrus-avocado salsa.
