Citrus Berry Beef Lettuce Wraps
Ingredients:
- 1 lb ground beef
- 1 head of lettuce (butter or romaine work best for wraps)
- 2 carrots, shredded
- 1 lemon (zest + juice)
- 1 orange (zest + juice)
- 1/2 cup mixed berries (blueberries, raspberries, or strawberries, chopped if large)
- 1/2 cup grapes, halved
- 1 tbsp olive oil
- 1 tbsp honey or agave (optional for balance)
- Salt & pepper to taste
- Optional: chopped mint or cilantro for garnish
Instructions:
- Cook the Beef:
- In a skillet over medium heat, add olive oil and ground beef.
- Cook until browned, breaking it up with a spoon.
- Add salt, pepper, lemon zest, orange zest, and a splash of both juices.
- Simmer 2–3 minutes until liquid reduces a bit and beef is citrusy and flavorful.
- Make the Berry Salsa:
- In a bowl, combine mixed berries, grapes, shredded carrots, and a squeeze of lemon and orange juice.
- Add honey if the fruit is tart, and a pinch of salt.
- Toss gently and chill while the beef finishes.
- Assemble Wraps:
- Separate lettuce leaves and wash/dry.
- Spoon some citrus beef into each leaf.
- Top with berry-carrot salsa.
- Garnish with fresh herbs if using.
Serving Suggestions:
Serve as a light lunch, appetizer, or party bite. Add a dollop of Greek yogurt or hummus if you want extra creaminess.
