Cilantro Shrimp Wraps

Juicy shrimp are marinated in zesty lime and garlic, tossed with fresh cilantro, and wrapped in crisp lettuce leaves. This light, flavorful dish is bursting with freshness and is perfect for a quick, healthy dinner.

Ingredients:

  • 1 lb (450g) medium shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 2 tbsp fresh lime juice (about 1 lime)
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • 8 large lettuce leaves (romaine or butter lettuce work well)
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes (optional, for a spicy kick)

Instructions:

  1. Marinate the shrimp: In a bowl, toss the shrimp with minced garlic, lime juice, olive oil, salt, and pepper (add red pepper flakes if using). Let it marinate for about 10–15 minutes to infuse the flavors.
  2. Cook the shrimp: Heat a skillet over medium-high heat. Add the shrimp along with its marinade to the hot pan. Cook for 2–3 minutes on each side, or until the shrimp turn pink and opaque. (Avoid overcooking to keep them juicy!)
  3. Add cilantro: Remove the pan from heat and immediately toss the cooked shrimp with the fresh chopped cilantro, coating them in the herby goodness.
  4. Assemble the wraps: Lay out the lettuce leaves and fill each with a few cilantro-lime shrimp. You can add an extra squeeze of lime on top if desired. Wrap the lettuce around the filling taco-style. Serve immediately and enjoy the fresh, zesty flavors!
