Chickpea Shawarma Wraps
A plant-based flavor bomb! These healthy Chickpea Shawarma Wraps are loaded with spiced chickpeas, fresh veggies, and a creamy tahini sauce—all wrapped up in a warm pita. Perfect for lunch, dinner, or meal prep.
Ingredients
For the chickpeas:
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp turmeric
- 1/4 tsp cayenne (optional)
- Salt and pepper to taste
For the tahini sauce:
- 1/4 cup tahini
- Juice of 1 lemon
- 1 clove garlic, minced
- 2–3 tbsp water (to thin)
- Salt to taste
Wrap assembly:
- 4 whole wheat pitas or wraps
- 1 cup shredded lettuce or chopped romaine
- 1/2 cup diced cucumber
- 1/2 cup chopped tomato
- 1/4 red onion, thinly sliced
- Fresh parsley or cilantro for garnish
Instructions
- Roast the Chickpeas:
Preheat oven to 400°F. Toss chickpeas with olive oil and spices. Spread on a baking sheet and roast for 20–25 minutes, shaking halfway through, until golden and slightly crispy.
- Make the Tahini Sauce:
In a small bowl, whisk together tahini, lemon juice, garlic, and a pinch of salt. Add water a tablespoon at a time until smooth and pourable.
- Assemble the Wraps:
Warm pitas slightly. Layer with lettuce, cucumber, tomato, onion, and roasted chickpeas. Drizzle generously with tahini sauce and top with herbs.
- Wrap & Serve:
Roll up your wraps or fold them taco-style. Serve immediately or wrap in foil for lunch on the go!
