CHERRY BALSAMIC CHICKEN

Sweet meets savory in this summer-perfect 25-minute dinner!

• 4 boneless skinless chicken breasts (or thighs)

• Salt & pepper to taste

• 1 tbsp olive oil

• 2 cups fresh cherries, pitted and halved

• 2 garlic cloves, minced

• 2 tbsp balsamic vinegar

• 1 tbsp honey

• 1 tsp fresh thyme (or ½ tsp dried)

• Optional garnish: extra thyme or chopped parsley

1. Season chicken breasts with salt and pepper on both sides.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side, or until golden brown and cooked through. Remove and set aside.

3. In the same skillet, add garlic and cherries. Sauté for 2–3 minutes until cherries begin to soften.

4. Stir in balsamic vinegar, honey, and thyme. Cook another 2–3 minutes until sauce is slightly thickened.

5. Return chicken to the skillet, spoon sauce over top, and simmer together for 2–3 minutes.

6. Serve hot with the cherry glaze spooned over each piece.

Serve with a side of couscous, quinoa, or a green salad tossed in lemon vinaigrette.
