Ingredients (Serves 6–8)
For the crust:
• 1 9-inch pre-made pie crust (or homemade if you prefer)
For the filling:
• 6 slices smoked bacon, chopped
• 1 tbsp brown sugar
• 1 tbsp unsalted butter
• 1 small yellow onion, thinly sliced
• 4 large eggs
• 1 cup half-and-half (or whole milk)
• 1 cup shredded sharp white cheddar cheese
• 2 tbsp fresh dill, chopped
• 1/4 tsp ground black pepper
• Pinch of salt (optional—cheese and bacon are salty)

Instructions
1. Preheat oven to 375°F (190°C). Place your pie crust in a 9-inch pie dish. Crimp edges and set aside.
2. Caramelize the bacon:
In a skillet over medium heat, cook chopped bacon until nearly crisp (about 5–6 minutes). Drain excess fat, then return to pan with 1 tbsp brown sugar. Stir until bacon is glazed and sticky. Remove and set aside.
3. Sauté onions:
In the same skillet, add 1 tbsp butter and sliced onions. Cook over medium-low heat until golden and soft (10–12 minutes). Let cool slightly.
4. Prepare egg filling:
In a large bowl, whisk eggs and half-and-half. Stir in cheddar, fresh dill, pepper, and a pinch of salt.
5. Assemble the quiche:
Evenly layer onions and caramelized bacon in the bottom of the crust. Pour egg mixture on top.
6. Bake for 35–40 minutes, or until the center is set and the top is golden. If crust edges brown too quickly, cover them with foil.
7. Cool slightly before slicing. Garnish with more dill if desired.
