Beef & Sweet Potato Hash
A hearty, healthy one-pan meal perfect for breakfast, lunch, or dinner! This savory hash is packed with protein, fiber, and flavor—your skillet’s new best friend.
Ingredients:
- 1 lb lean ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp ground cumin
- Salt & black pepper to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
- Optional: eggs for topping
Instructions:
- Prep the veggies – Dice the sweet potatoes, peppers, and onion into even pieces.
- Cook the sweet potatoes – Heat 1 tbsp olive oil in a large skillet over medium heat. Add sweet potatoes and cook for 8–10 minutes, stirring occasionally, until slightly tender. Transfer to a bowl and set aside.
- Sauté the veggies – In the same skillet, add another tbsp olive oil. Add onions and peppers. Sauté for 4–5 minutes until softened. Add garlic and cook for 1 minute more.
- Brown the beef – Add ground beef to the skillet and cook until browned, breaking it up as it cooks. Season with paprika, cumin, salt, and pepper.
- Bring it together – Add the cooked sweet potatoes back into the skillet. Stir to combine and let everything cook together for 3–5 minutes until heated through and slightly crispy.
- Top and serve – Garnish with chopped parsley. Add a fried or poached egg on top for an extra boost!
